Happy birthday, America!
We had our celebratory barbecue last weekend on as hot of a day as it is today. These ice-cream sandwiches were a welcome reprieve – you won’t have any trouble finishing them off before they melt!
Another bonus: the cookies are no-bake, so no standing in front of the oven on a sweltering day. You’ll be standing in front of the fridge/freezer a lot though.
You’ll need:
- 1.5 sticks of unsalted butter, room temperature
- 1 cup creamy peanut butter
- 1 cup confectioners’ sugar
- about 7 oz speculoos cookies, crushed
- about 6 oz chocolate cookies, crushed
- vanilla pod
- 2 T fleur de sel (a very mild, beautiful finishing salt)
- vanilla fudge ice cream
1. Cream the butter, peanut butter, and 1/2 cup of confectioner’s sugar until light and fluffy and well-combined. Stir in the crushed cookies – you’ll get a crumbly dough that’s still pretty soft. On a warm day, I would refrigerate the dough for 10-15 minutes before working with it. I also placed my 2.5 ring mold/cookie cutter in the freezer before using.
2. In the meantime, cut open your vanilla bean (or use one that was left over from using more of the beans in another recipe) and place in a small ziploc bag with the fleur de sel. Let it infuse while you work on the cookies.
3. Line a sheet pan with foil or wax paper. I would also line the surface you will be using to roll out the dough, then dust it with remaining confectioners’ sugar. Roll out to about 1/4 inch thick and refrigerate again for a few minutes.
4. Using your chilled cookie cutter , cut out cookies and place on the baking sheet. Freeze until ready to serve.
5. To serve, scoop ice cream onto a cookie, sprinkle with fleur de sel, top with another cookies and sprinkle lightly with more fleur de sel.
Salted peanuts, icecream and no bake! Wow, you’ve certainly been busy in the kitchen. Happy July 4th, no doubt a big week of celebrations ahead 🙂
