I am one of those people who loves pickled everything, but it’s always great to explore even more pickling options – who knew pickled cauliflower tasted amazing or that pickled fennel is completely addictive?
Tip: This is a quick pickle – let the fennel rest with the salt for a bit, then let sit for two days in the fridge before eating (or refrigerate for longer keeping).
Quick pickled fennel (with pink peppercorns and coriander)
You’ll need:
- 2 large fennel bulbs
- 1 1/2 T salt
- 1/2 tsp pink peppercorns
- 1/2 tsp coriander seeds
- 1/2 cup apple cider vinegar
- 1/2 cup of miring rice vinegar
- a small pinch of sugar
1. Trim and chop the fennel (keep a handful of the fronds). I like to keep it chunky to maximize crunch, but slice the fennel as thinly as you’d like. Sprinkle with salt and let sit for 30-40 minutes.
2. In the meantime, prepare the brine – combine the vinegars, coriander seeds, pink peppercorns, sugar, and a few of the fennel fronds.
3. Divide the fennel between two medium mason (or my favorite, Weck) jars. Cover with vinegar mixture and pack tightly. Close and refrigerate.

My mum pickles cucumbers and carrots in a similar way but never fennel. Being in love with fennel as I am, I can’t wait to try it
