Inspiration can strike from anywhere. In this case, I had some leftover plums that needed using and had fallen in love with the cherry pie Larabar flavor (almond, date, cherries) just last week.
This compote can be a lovely dessert all on its own but is equally delicious with yogurt or ice cream.
You’ll need:
- 1/2 cup of water
- 2 tbsps honey
- 1/3 tsp dried orange peel
- 1/3 tsp cloves
- 1 tsp allspice
- 1/2 tsp cinnamon
- 1 1/2 tsp balsamic vinegar
- 4 ripe red plums (cut into quarters)
- 2 tbsps chopped dates
- 2 tbsps dried cherries
- 1/4 cup blanched almonds (roughly chopped)
1. Heat water and honey in a small saucepan, stir to dissolve. Add plums, dried fruit and spices and bring to a boil.
2. Add balsamic vinegar and lower heat. Reduce for about 20 minutes until soft and gooey, mixing a few times as you go along.
3. Take off heat and mix in almonds. Delicious right away or even better the next day!

Mmmm… you’ve inspired me to make this! I’m thinking a batch of this would be lovely as a dessert and even served with pork or chicken as it doesn’t seem overly sweet!
