What is lemon month without lemonade?
Here is a fun recipe using prickly (or cactus) pears that is one tall drink of natural, fuchsia-colored goodness.
You’ll need (serves two):
- 2 ripe prickly pears
- 1 t golden syrup
- the juice of 2 lemons
- Seltzer
- Mint for garnish, optional
1. Holding a hand towel in your hand (they are prickly!), cut the prickly pears in half. Use a melon baller to scoop out the flesh into a bowl.
2. Mash the prickly pears.You can use a mortar and pestle for this or just a spoon and a firm hand.
3. Add in the freshly squeezed lemon juice and the golden syrup. Stir and taste for sweetness.
4. Divide the fruit mixture between two tall glasses, top with seltzer, and proceed to escape to a postcard location of your choice.
Sounds great. Those pears must be sweet.
Thanks, I thought you guys might like that :). You know, they are not overwhelmingly sweet, but have a great, slightly tropical honey-ish flavor.
I have never tried to use prickly pears in a recipe and this sounds ike a wonderful one to change that! I can’t wait for them to come in season
