Here is a great winter recipe – Provençal chicken, braised with fresh delicious flavors. Homey and hearty and an excellent use for your Dutch oven, if it’s been getting dusty.
You’ll need:
- 4 tablespoons olive oil
- 3 chicken thighs, 2 drumsticks
- 1 red onion, sliced
- 4 cloves chopped garlic
- 1 bulb fennel, sliced
- 1 can chopped tomatoes
- 2 small red potatoes
- 2 bay leaves
- 1 sprig fresh rosemary
- 1 sprig fresh thyme
- handful of fresh sage leaves
- 2 tablespoons white wine
- 1 teaspoon black pepper
- 2 teaspoons salt
- pepper to taste
- 1/2 cup chicken stock
1. Heat 1 tablespoon of olive oil in a casserole/Dutch oven and brown chicken, set aside.
2. Deglaze pan with white wine. Saute onions and garlic and cover with browned chicken. Cover with fennel, tomatoes, potatoes and herbs.
3. Take off heat, cover tightly, and place in a preheated 350 F degree oven for approximately 2 hours.
