That’s a vague name for a dish but that’s what it is! Part mousse, part puree, this would make an equally fun light starter and dessert that is also very kid-friendly.
You’ll need:
- 300g pumpkin
- 1 apple
- 3 table spoons honey
- zest and juice of 2 oranges
- 1/3 tea sp. cinnamon
- 50g walnuts
- 100ml freshly whipped cream
- mint leaves for decoration
1. Dice apples and pumpkin into very small cubes. Put into a hot saucepan, add honey, orange juice and zest, and cinnamon and cook for approximately 7 to 10 minutes.
2. Pour into a blender and puree. Spoon put into tall martini glasses. Cool. Decorate with a dollop of whipped cream, chopped nuts and a sprig of mint.
