Let me just tell you that moving, packing, arranging and organizing is a bitch. Anyone who has done it before knows what I mean.
It may be that it is just beginning to dawn on me that in less than three weeks from now, I will be moving back to NY where I haven’t lived full-time for over 5 years and that I’ll be starting the CMD program at ICE in January.
It’s exciting but scary and at least the organizing and arranging is keeping my mind plenty occupied.
So back to French Fridays – pumpkin-gorgonzola flans today. Rehearsing Thanksgiving dishes is also keeping me busy! I think this one will definitely qualify for the potluck. It’s deceptively simple, but interesting enough to introduce lots of people to the taste.
I subbed in toasted pine nuts for pecans for a little twist on the classic combination and added a combination of pink & black pepper.
Served with creme fraiche and/or some honey! So, so good.

I really want to make this one, and even have all the ingredients, but just haven’t got around to it yet. Your version looks delicious–the pine nuts sound like a great sub.
Oh, and the moving–I just moved (again) last month and I feel for you. Now, what’s the CMD at ICE?

Thanks, Mary! I think last time I moved, especially as it was transatlantically, I figured it *was* the last time haha. But never say never!
Definitely make these, they are so easy and surprisingly complex in flavor.
About that CMD: that is my other big life change – I’m starting the Culinary Management degree program at the Institute of Culinary Education in NY in January! So excited.

Love the pine nut sub. Made these too…while I liked them, the family didn’t, so they won’t make the cut for T-day…too bad. Good luck with the move.
