Something to warm you up this week – simply steamed and flash fried rapini (broccoli rabe) with a spicy sauce.
You’ll need:
- 1 pound rapini
- 1.5 T red wine vinegar
- 2 T olive oil
- pinch of salt
- 1/2 of a dried ghost chili, chopped finely
- 1 T garlic soy sauce
1. Wash and trim some of the leaves off of the rapini/rabe.
Bring a large pot of water to boil, place colander or steamer basket over it. Steam rapini for about 5-7 minutes until bright green and just slightly tender in the stalk.
2. Prepare sauce by combining all the ingredients and heat up a skillet – flash fry the rapini on both sides. Take off heat.
3. Toss the rapini in the sauce. How great does it look next to that sockeye salmon?
