Here is an easy and delicious dessert for two to make this week.
You’ll need:
- 2 yolks
- 1/3 cups superfine/caster sugar
- 4 tbsps mixed red berries
- 3-4 rosemary sprigs
- 1/2 cap ful of rum
- pinch of AP flour
1. Infuse the rosemary sprigs in 5 oz of boiling water (in total for about 10-15 minutes). Strain the liquid. Add 1/2 cap of rum.
2. Separate two eggs – you will need the yolks only. Whisk the yolks with 1/3 cups caster (superfine) sugar until pale yellow and frothy.
3. Add the rosemary infusion and a pinch of flour to the yolk and sugar mixture.
4. In a double boiler, over medium heat, let the mixture thicken, whisking constantly until you get a custard that is thick enough so that it can hold soft peaks or ‘lines’ from the whisk.
5. Turn the broiler or the broiler setting of your oven on. Divide the berries into 2 ramekins and cover the fruit with the sabayon.
6. Put the ramekins under the broiler for a few minutes, until browned and serve immediately.

I used small 3 oz ones (you can see they are pretty full) but you can definitely use your 4 oz ones too.
