This is a perfect addition to any of your breakfast or brunch dishes – be it yogurt, pancakes, oatmeal, or french toast.
A simple way to elevate the flavor of winter strawberries.
You’ll need:
- 3 cups fresh strawberries
- 1 vanilla bean
- 1 orange
- 1/4 cup sugar (you could use half vanilla sugar and half regular superfine sugar)
1. Preheat oven to 425F. Line a baking sheet with foil and prepare another, slightly larger piece of foil to tent on top.
2. Wash, core, and halve the strawberries. Zest the orange in large, long strips.
3. Cut open and scrape the vanilla bean; mix vanilla beans, the pod, and zest with sugar.
4. Layer the strawberries on the baking sheet, sprinkle with vanilla-sugar mixture. Tent/cover with foil and roast for approximately 20 minutes – you want the berries to retain some texture & you’ll be able to smell all the beautiful aromatics when they are ready.
You’ll have some lovely syrup in the pan too – drizzle it over your breakfast foods or reserve it (and the citrus) for cocktails!
Maybe on the top of icecream? a cheescake? lots of versatility.
