An easily delicious summer dessert – or creative hors d’oeuvre – with strawberries gone savory (with a little help from goat cheese)!
(adapted from this recipe)
You’ll need:
- 1 sheet puff pastry
- 16 oz strawberries, washed and hulled
- 1 T maple syrup
- 1T balsamic vinegar
- 1 T extra virgin olive oil
- 1/4 teaspoon kosher salt
- pinch of black pepper
- 2 T chestnut honey (or buckwheat honey, for nuttiness)
- 1 T balsamic glaze
- 4 oz goat cheese, at room temp
1. Preheat oven to 350F. Halve the strawberries and mix them with maple syrup, 1 T honey, vinegar, olive oil, salt and pepper. Turn out onto a foil-lined baking sheet and roast until fragrant and syrupy, about half an hour. Remember that the sugars in the honey will brown quicker, so watch the berries and give them a little shake every now and again.
2. In the meantime, prep the pastry: cut it into squares of various sizes (no need to be precise here) and then score another smaller square on each piece – this is where you will put the filling.
3. Mix goat cheese with lemon zest, remaining honey, and balsamic glaze. Place a dollop of the goat cheese mixture in the middle of each scored square of pastry. Bake in same 350F oven for 20-25 minutes until pastry is golden. Keep the strawberries covered and slightly warm in the meantime.
4. Top baked goat cheese tart-lets with the strawberries and the strawberry syrup. Serve immediately.
