Sometimes I almost forget just how much I love baking or how nice it is to get up in the morning and whip up something delicious. I admit that I usually get my baking kumbaya-yas out in the winter but I was extra inspired because of a class we had at ICE yesterday (more on that later) despite the souring temperatures here in NYC.
The salted butter breakups are a wonderful variation on delicate shortbread cookies. The dough comes together easily (though here I had to use a little more ice water, about 7.5 tablespoons).
My slight variation was a salty-cinnamon topping on half of the cookies – I love salty-sweet combinations and these came out beautifully. The slight saltiness is entirely addictive.
Someone keep me away from the King Arthur’s catalogue, please! I sense a baking attack coming on.

I can do this kind of baking any day – simple and easy:) Brown, crispy edges were the best.

Agreed, Lana, and I too loved the edge pieces! Maybe this recipe will take you over to the ‘dark’ salty-sweet side :). I find that I can only have salty chocolate now…

King Arthur = love. I have visited the company store in Norwich Vermont with Nana and stocked up. I even made my younger son sit in throne they have set up in the lobby. My reward was a photo of a pouting young man- which makes it all the more dear to me. I am almost glad we didn’t do this one in October – it would have added to many pounds over the winter !
