An easy but special breakfast treat and a bit of a family ‘secret’ – in the way that this is the only way that everyone in my house would eat oatmeal for breakfast!
You’ll need (per each serving):
- 1 cup quick oats (also delicious with steel cut oats* but those require some soaking and preparation ahead of time)
- 1.5 cups hot water
- 1/2 tsp honey
- 1.5 tbsp grated cheese (Parmesan or Asiago is best)
*If you are using steel cut oats, this is also fantastic slowly cooked with the addition of soy sauce and scallions – believe me! It makes a great dinner dish.
1. In a serving bowl, steep the oats in hot water (just boiled) for 5-10 minutes. There should still be a bit of liquid leftover; if there isn’t, add a little more water.
2. Put in the microwave, uncovered, for 2 minutes at high. The porridge will rise and gain a fluffy texture.
3. Carefully mix in the cheese and, if you want, drizzle with a little bit of honey on top. The options are endless – I’ve added an egg on top, a little bit of crispy pancetta et cetera, et cetera.
Cheese and oatmeal… hmm. Well cheese and grits go well together and you haven’t steered me wrong yet!

Wow,that is really an interesting combo! I love savory oatmeal, I put sauted mushrooms in my bowl of savory oats and it is pretty tasty. But i would have never thought it is possible to combine honey and cheese! Good job:)
