So the FFWD assignment this week called for scallops and this is a bit of a fib because these aren’t scallops, these are shrimp – my mom doesn’t love scallops and I was cooking dinner for her so used some jumbo (U12, Chef Ted!) shrimp instead.
I loved the sauce (actually, I found it entirely addictive) – I used pink grapefruit instead of orange juice, and it gave the light tropical flavor an even deeper dimension. Final verdict: this would be great with scallops or shrimp.
I sprinkled a little pink Himalayan salt on top of the shrimp to finish it off.

I was thisclose of using pink grapefruit, but decided to go with orange instead. I will definitely consider trying it ‘your way’ with the shrimp and the grapefruit. Happy weekend!

I did not try the recipe because we do not
like scallops. I thought about either shrimp
or cod but ended up doing nothing. But
seeing your pictures, I think I might give
shrimp a chance. Tricia made the scallops
