The last one to conclude this month of asparagus – this salad combines quite a few of my favorite things.
Note: Use a ring mold if you have one – it will make constructing the various layers of this salad a bit easier.
You’ll need:
- 6-9 asparagus stalks, trimmed
- 5 paper thin pieces of smoked salmon
- 1 cup soba noodles
- 1 T olive oil
- 1/2 T soy sauce
- 1/2 T lemon juice
- 1/2 T rice vinegar
- 1 t pink peppercorns
- 1/2 t sea salt
1. Bring two pots of salted water to a boil. Blanch the asparagus in one (immediately putting into ice water) and cook the soba in the other (rinse and also let cool).
2. Use a mandolin or a peeler to shave asparagus into thin strips. Arrange thin strips of salmon around the asparagus.
3. In a small bowl, combine olive oil, soy sauce, lemon juice, and rice vinegar to make your dressing. Toss soba lightly in the dressing and arrange on top of the salmon.
4. Sprinkle with crushed pink peppercorns, sea salt, and a little more olive oil on top.
I’m sure asparagus and salmon are a winning combo 😀
