Here’s to the end of another busy week – time is flying, and it’s only a week or so before I leave to Paris.
Continuing the not-that-regular Simple suppers series… Believe me, I think about them more often than I write about them, as I am sure you do too.

The theme, as it is, is that you don’t need a ton of time to make a tasty and creative dinner dish.
This particular supper was inspired by Mark Bittman’s primer on breaking down a whole chicken & cooking your favorite chicken parts in new, inventive ways.
For the Greek style chicken recipe, you rub and stuff the chicken with a mixture of minced garlic, fresh oregano, and lemon zest, then roast it until crispy in one pan with olives, more oregano, and little tomatoes. Completely foolproof and delicious.
And before we tuck into this weekend, a quick look back at last Sunday + a beautiful Mother’s Day lunch at Jean Georges in a dining room full of sweet peas (my favorite flower) and diffused light.
The uni on salted rye toast was my favorite – so savory – and the rhubarb sorbet served on top of a delicate meringue was a fitting finish.

I’m a little late for the weekend, but I am so glad to have caught this recipe. I have been thinking about how to change my “chicken routines” and add in something that is a little more exciting, but still on the simple side. This undoubtedly fits that bill, and would be very popular with my gang. I look forward to it. And your Mother’s Day meal at Jean Georges is exquisite! How beautiful…now, on to Paris!
