I do not need to tell you that this is not a classic niçoise salad, but I believe it is equally delectable.
Anchovies are one of the things that inspire either love or hate. Me, I love anything salty so, anchovies are my kind of thing. As are capers and soft boiled eggs and raw kale.
Anchovies are also remarkably good for you as an anti-inflammatory, a source of omega-3, iron, and calcium. So if you don’t always enjoy one of the things on the above list, give this salad a chance.
Embrace the anchovy!
Kale ‘niçoise’ salad
You’ll need:
- 2 cups raw lacinato kale (shredded)
- about 10 anchovies in oil
- 1 t capers (lightly crushed)
- 2 eggs
- 1/2 dijon mustard
- 3 T olive oil
- pink peppercorns
1. Wash kale well, trim, dry, and cut into thin ‘shredded’ strips.
2. Place eggs into a small saucepan with salted water and bring to boil and cook for 4-5 minutes (depending on how runny you like your yolks). Rinse under cold water and peel carefully, then cut eggs in half.
3. Make the vinaigrette – drain the oil from the anchovies into a small bowl, combine with about 3 T of good olive oil and the mustard and crushed capers, and whisk to form a light emulsion.
4. Toss kale with anchovies and vinaigrette. Top with eggs and pink peppercorns, crushing them lightly between your fingers.

This sounds very good. I love kale but have never had it in a salad. This sounds like a good way to have a new experience.

I love the texture of raw kale and, in this case, it’s a nice, hearty green to pair against robust flavors like anchovies etc. hope you enjoy it, Karen!

Kale seems to be the go to food for nutritious, hearty meals at the moment. I love the idea of a Nicoise with oozey egg and I’m a definite yes gal for anchovies! Looks delicious as always! Enjoy your Christmas (which’ll no doubt) be filled with delicious things too
