I did eventually make it back from France and one of the first things I did was make the stock for this week’s French Fridays with Dorie soup.
London weather is so entirely soup specific, I plan to make a LOT of soup this week (picking up some cepes at the market later today!). So everyone’s invited for Soup Saturday at my house.
I found myself adding a bit more lime juice and fish sauce (because I love the flavors of both) and I also substituted pink peppercorns for white peppercorns, fresh chiles for dried ones, and added some curry leaves to the original bouquet garni – delicious, love the layers of flavor! And yes, I omitted the coconut milk. Being at least 1/3 Asian :), S&H makes a lot of Asian-inspired dishes and a lot of things with coconut milk – which I don’t dislike at all! – but for me, the delicate spicy & sour flavors of this broth shine much more brightly without the coconut milk.
(I have to admit that I took a picture only after having a bowlful 🙂 so I think this one photographed a bit lighter!)

That looks fantastic! I’ve now had a couple of bowls too–it’s grey and chilly here as well. Did you put coconut milk in yours?

Hi Mary (love your blog logo by the way)! It’s been great for a day like today, hasn’t it? I did leave it out, really preferred to let the spicy & sour flavors play out more in the broth!
