The fact that I love quiche is well-documented (you can search s&h for a post called ‘Quiche!’).
And Dorie’s recipe has been a standby for parties, potlucks, and casual dinners (with a side of salad, it’s just enough) for me for quite a bit now.
I used some pancetta, cut into lardons, and added some other green herbs (thyme, rosemary – never hurts!) that I had to the mix. Quiche is great like that – it is so flexible and you can add whatever you like.
The only rule is: don’t make just one quiche, it is inevitably never enough.

It’s something I learned over time! At my housewarming a few months ago, even three quiches was not nearly enough :).

These quiches are wonderful, I am a great quiche person, love your variations. I hope I am not being forward sharing my old base with you but you might like to try it, it is so quick:, 1 cup flour, 1 cup rolled oats, 1/4 cup olive oil. 1/4 cup water. s&p. Mix and press into the dish. Sometimes I add sunflower seeds too! Yours look so gorgeous I may make a baseless one today, but then I am sure it will have another name! It is good Love the Body Food! c
