Fair warning: these are addictive. Which is why I baked them into mini-muffins although you could, of course, make them full-size – the recipe is easily doubled.
It’s a nice way to sneak in some spinach into a treat too, so pack it in there.
Tip: The queso blanco itself is not that salty, so sprinkle these with some sea salt before baking. Also, to go with the rustic look of these muffins, I just cut some parchment paper parcels instead of using muffin cups. This makes 12 mini muffins.
Savory muffins with spinach and queso blanco
[Recipe adapted from bon appetit]
You’ll need:
- 1 cup AP flour
- 1/2 cup whole wheat flour
- 1/8 cup raw sugar
- 1 egg
- 1/3 cup plain drinkable yogurt
- 1/2 cup raw spinach, thinly sliced
- 1/3 cup queso blanco, cubed
- 1/3 cup canola oil
- 1 t baking powder
- 1/2 t smoked paprika
- 1/4 t chili powder
- 1/2 t salt
- 1/4 t ground pepper
- extra salt for sprinkling on top + extra canola oil for greasing the tins
1. Preheat oven to 375F. Line the muffin tray with parchment squares or muffin liners, add a drop of canola oil to each.
2. Sift together the dry ingredients, including all the spices, in a large bowl. Mix in the yogurt, egg, and oil.
3. Wash the spinach well, dry, roll the leaves together, and slice thinly. Cube the cheese. Fold into the batter.
4. Pack the muffins cups with about 2 tablespoons of batter each. Sprinkle with sea salt before putting in the oven.
5. Bake for about 25 minutes until golden. Any cheese bits on top of the muffins will be gooey and lightly browned.
I’m not usually keen in savoury muffins but for these I could make an exception 🙂

Savoury muffins must be the best way to get some lovely greens into them. They look delicious and that little cube of cheese on top is quite cute. Unfortunately my better half isn’t a savoury muffin kinda guy, but it doesn’t stop me from looking and admiring your gorgeous bakes 🙂
