The sun may still be a little chilly, but there are happy spring days ahead.
Here is a wonderful, colorful spring salad that lets my mind race ahead to the possibilities of picnics, lawn games, and barbecues.
You’ll need:
- 2 bunches radishes
- 3 hard-boiled eggs
- 1 bunch scallions/spring onions (makes about 1 cup chopped)
- 5-6 T fat-free plain kefir (depending on consistency)
- 6 T low fat sour cream
- 2 T olive oil (I like using a ‘green’ variety for this, like a Greek olive oil with lots of flavor)
- salt, pepper
1. Wash radishes, trim greens, and chop finely lengthwise.
2. Chop the eggs and the scallions to about the same size.
3. Make the dressing – in a bowl, whisk together sour cream, kefir and olive oil. Add salt and pepper to taste.
4. Gently combine all the ingredients in a large salad bowl, add dressing, and serve immediately.

That salad is so beautiful. And thanks for planting the idea in my head that I use kefir in salad dressings (where have I been, that I haven’t done that before!). My radishes and spring onions should be ready for plucking in a couple of weeks – I’m going to save this recipe for then.
