The sun is still shining, though perhaps a little less brightly, and lights are turning on a little earlier around town. Change is in the air.
But for a few more weeks, you can still enjoy some beautiful local produce. A side, a salad, or lunch – this squash slaw is light and seasonal.
You’ll need:
- 1/2 large butternut squash
- 1 1/2 tsp honey
- 1 tablespoon yogurt
- 1/2 tsp fresh grated ginger
- 1 tablespoon fresh lemon juice
- pinch of salt
- pinch of sugar
1. Use a mandolin – carefully – to slice the squash into thin strips.
2. In a bowl, use your hands to gently mix the squash with salt and sugar.
3. Dress the slaw with yogurt, lemon juice, honey, and fresh grated ginger.

Yum! What a different way to serve squash. I usually see it as dumplings or soup.
