A little twist on the traditional tea sandwich – strawberry and cucumber sandwiches perfect for our outing to Belmont this weekend.
The trick that ties this all together is the mint compound butter (a fancy term for butters that have something added to them i.e. garlic, parsley, pesto etc.)
You’ll need:
- mint compound butter – 3 T soft butter + 1 1/2 T finely chopped mint
- approx 10 ripe strawberries
- 1/2 of a firm cucumber
- wholegrain baguette
- fleur de sel
1. Make the butter first – fold mint into the butter and chill slightly (make sure it is still spreadable when you are ready to make the sandwiches).
2. Slice the strawberries thinly; half the cucumber and slice. Slice baguette in half.
3. Spread one side of the baguette with the mint butter, layer the cucumber on top. Layer the strawberries on the other piece of the bread, sprinkle with just a touch of fleur de sel.
Wrap up the sandwich tightly and refrigerate before slicing and serving.
