A little twist on the traditional tea sandwich – strawberry and cucumber sandwiches perfect for our outing to Belmont this weekend.
The trick that ties this all together is the mint compound butter (a fancy term for butters that have something added to them i.e. garlic, parsley, pesto etc.)
You’ll need:
- mint compound butter – 3 T soft butter + 1 1/2 T finely chopped mint
- approx 10 ripe strawberries
- 1/2 of a firm cucumber
- wholegrain baguette
- fleur de sel
1. Make the butter first – fold mint into the butter and chill slightly (make sure it is still spreadable when you are ready to make the sandwiches).
2. Slice the strawberries thinly; half the cucumber and slice. Slice baguette in half.
3. Spread one side of the baguette with the mint butter, layer the cucumber on top. Layer the strawberries on the other piece of the bread, sprinkle with just a touch of fleur de sel.
Wrap up the sandwich tightly and refrigerate before slicing and serving.
This sounds beautiful! I have mint popping up everywhere, and the strawberries are ripe. I can’t wait to try this.
Thank you! Sounds like you have all the necessary ingredients ready to go :).
those sandwiches would be wild but I am most fscinated by the mint butter, so easy and I am sure quite the taste sensation.. a startling collection of tastes c
Thanks, C! Try it with your mint, I am sure it will be divine. It all comes together into almost a Pimms-like combination of flavors haha. x
There you go revolutionising high teas everywhere 😀
This is a fabulous idea!

haha I think it would be a lovely new high tea item ;)!
This looks delicious.. would it be the same if cream cheese substituted the butter? My hubs doesn’t care for butter… xo Smidge
Hi, Smidge! Welcome back:) You know, I think it would also be great with a mild, light goat cheese spread! x
Lovely. With a Pimms I can picture myself at Wimbledon now!
me too! 🙂
Totally delish idea, that I really must try. Thanks!
You’re very welcome, enjoy!
