You can substitute various nuts and stone fruit or apples, to your liking, to alter this recipe. This would be great with juicy raspberries or blackberries tossed in as well.
You will need:
- 3/4 cup hazelnuts (roughly chopped)
- 1/2 cup oatmeal
- 3/4 cup flour
- 1/2 cup light brown sugar
- pinch of salt
- 1 apple
- 4 peaches
- 2 apricots
- 7 tablespoons butter (a little less than a US sized stick which holds 8 tbsps)
- 1-2 teaspoons cinnamon or nutmeg, to taste
1. Preheat oven to 375F. Cut the fruit, not too thinly, and layer in a large baking dish. Sprinkle with a tablespoon of sugar and any spices.
2. Combine the dry ingredient in a large bowl, add the nuts and mix well together. Use your hands to work in the softened butter until the dough resembles rough crumbs.
3. Sprinkle the dough on top of the fruit. Dot with a little more butter (about a tablespoon in total).
4. Bake until bubbly and brown.
Great with ice cream, whipped cream or sour cream or just on its own.
