What to do with your leftover cucumbers.
.. and I have a lot of leftover cucumber this week. I don’t really remember what I got so many cucumbers for last weekend but there you go.
If you’re planning on hosting a get-together or a party this weekend, here is an easy and delicious dip recipe:
- Grate the cucumber(s)
- (Depending on how much you’re making) Combine equal parts sour cream and plain yogurt
- Season the yogurt/sour cream mixture, ideally with Vegeta but you can also make your own mixture of salty-spicy goodness.
- Add the cucumber and combine everything really well + add dill to taste/garnish.
Yes, this is really Eastern European in flavour, with influences of tzatziki thrown in, but I can’t tell you how popular this is – make an extra batch to keep in the fridge for refills!
