Sorry if for it’s been a bit quiet this week – it was my birthday, and I am in France with my family.
I used a pause in celebrating to treat myself to a trip to the market and put together this lovely summer salad, so full of color and flavor.
Everything in this salad depends on the produce, so be picky!
You’ll need:
-3 large red and yellow (or orange) heirloom tomatoes
-1 large juicy but still firm peach
-1/2 block soft sheepsmilk cheese
-1 red onion
-4 T chopped mint
-2 ears of sweet corn
-olive oil (greener Greek varieties work well here)
-salt, pepper
1. Slice the tomatoes and peach lengthwise, fairly thinly.
2. Cube the cheese, leaving it pretty chunky. Slice the onion very thinly.
3. Clean the corn well, then use your chefs knife to take the kernels neatly off of the cob.
4. Add mint and mix everything together in a large bowl. Dress with olive oil and sprinkle lightly with coarse salt and pepper before serving.
