Trying to get back on the FFwD bandwagon this month, starting off with this goat cheese cake. It’s light, fluffy and a great balance of tart and sweet.
Goat cheese is great. Also, it’s actually lower in calories and easier to digest than many other cheeses because of the unusual structure of its component fats (yes, I recently had to do a product comparison project on different goat cheeses).
I used a little bit less sugar because I used 8 oz of Laura Chenel Chabis goat cheese (by far, one of the best US-produced goat cheeses in my book) and 1 oz of a Chevre with honey that I had left over, which was already pretty sweet itself.
Look at these cute spoon measures that my friends got me! I’ve been making good use of them.
Definitely a keeper recipe – nothing too intimidating, but fantastic and flexible. I think it would be great with a coulis or a dollop of creme fraiche.
