There is something about this weather that makes me crave the coziness of meatballs. Plus, this recipe gives you another fresh way to enjoy that holiday bird – the turkey!
You’ll need:
- 2 lbs turkey mince (dark meat, thighs etc)
- 2 eggs
- 1/3 cut panko ‘breadcrumbs’
- 1 T dried oregano
- 2 T mayo
- salt, pepper
- olive oil
1. Preheat oven to 450F. Prep and oil a baking dish (square or round is fine).
2. In a large bowl, mix together the turkey, panko, eggs, mayonnaise, and spices – use your hands! – until everything is well incorporated.
3. Keeping your hands dry, form meatballs, approximately 1.5 inches in diameter. Place them snugly in the baking dish, so they are spaced out evenly – they should be touching.
4. Roast for about 20-22 minutes until firm. The meatballs should still be extremely moist and tender, and addictive, hot or cold on a sandwich.

Thank you! I think if it’s dark turkey meat, it’s lighter but still as flavorful as beef/pork!
