Whatever wonderful plans you may have, hope you all have a beautiful fall weekend. As you read this, I will be just about to land at my family’s home in Russia, fighting jet lag with the time-tested formula of tea and cake.
The flavors in this crisp are so deep and the colors are so stunning, it will warm you all over.
You’ll need:
- 10 ripe but not overly soft purple plums
- 2 cups quick cook oats
- 1/2 tsp cinnamon
- 1/2 tsp ground nutmeg
- 1 cup coconut oil
- 1/3 cup raw sugar
1. Preheat oven to 350F. Wash, pit, and slice the plums in half. Layer them in the bottom of a loaf pan (ceramic is best). Sprinkle with about a tablespoon of sugar, cinnamon and nutmeg.
2. Mix together the remaining sugar, oats, and coconut oil. Top the plums with the crisp mixture, sprinkle with another small pinch of nutmeg.
3. Bake for 20-25 minutes until topping is golden and crispy, and plums are bubbly.
