It’s cooled down just slightly, just enough that I can enjoy writing about warm food again.
Seafood is a favorite of mine during the summer, and this prawn salad is a crowd-pleaser that makes a wonderful, easy to assemble summery lunch.
*yes, these are not actually prawns – which, of course, you are welcome to use instead – but warm prawn has a nice ring to it, doesn’t it?
You’ll need:
- 1 lb rock shrimp, cleaned and cooked
- 6 cherry tomatoes, halved
- 4 pearl onions, thinly sliced
- 3 cloves garlic, crushed
- 3 T chopped fresh parsley
- 2 cups flageolet beans, cooked (I got mine from Rancho Gordo, but if you can’t find flageolet beans, use navy or cannellini beans)
- olive oil
- a splash of rice or white wine vinegar
- salt and pepper
- pinch of red chili flakes
1. Prep the shrimp and beans first.
In a large pan, heat oil, garlic, chili flakes, and two of the sliced pearl onions until just fragrant.
2. Lower heat. Add beans and tomatoes to the pan and heat through. Add a splash of vinegar.
3. Turn off heat, season well and toss the bean mixture together with the shrimp in the pan.
4. Serve immediately, scattering with the remaining onions and plenty of parsley on top.

We have shrimp at least once a week so I believe I will be making this dish shortly.. very nice.. and it has cooled down here too and The Rain Has Come! sshh.. c

Rock Shrimp is certainly something ivebheard of, but never tried. The flesh reminds me of Australisn yabbies, but either way can I add it all looks incredibly tasty!

I’d say so! That means rock fish might be like those scampi or langoustines? Either way, all of these sound incredibly tasty 🙂
I am a fan of all of the above! Rock shrimp are quite small, but taste similar to langoustine, yes.
