Do you know those meals made out of random ingredients left in your fridge? I have started writing those down because they are often some of the best things and are, otherwise, pretty hard to repeat.
This is a salad made out of things that I always have on hand, even if I am out of everything else: cheese, fruit, some vegetables.
You’ll need:
- 3 small red beets – peeled, boiled, cooled
- 1/2 pink grapefruit
- approx 1/3 cup mild goat cheese (however you measure the log that you have)
- one ripe tomato
- 1/4 cup chopped mint
- olive oil
- 1 t red wine vinegar
- salt
1. Section and clean the grapefruit. Chop mint and mix with the grapefruit in a bowl, set aside.
2. Thinly slice the tomatoes and season with a little bit of salt. Slice the goat cheese and beets as thinly as you can.
3. Mix together a quick vinaigrette with the grapefruit juice and mint that’s reserved in the bowl, vinegar, and olive oil.
4. Layer the vegetables with the cheese, alternating as you go, and drizzle with dressing before serving.

I think if you have quality ingredients and maintain a fundamental balance – the sweet beets vs the tart grapefruit + creamy cheese, refreshing mint and tomatoes – you’re good to go!
