This is a wonderful side dish full of flavor – kids and adults alike will eat it up!
You will need:
- 1.5 cups wild rice
- 1 cup vegetable stock
- 1/3 cup sundried tomatoes
- 2 cloves of garlic (chopped)
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tsp herbes de provence
1. Bring 2 cups of water and 1 cup of vegetable stock to boil in a medium saucepan.While the water is coming to a boil, rehydrate the tomatoes – put them in a small bowl of hot water and chop finely once ready.
2. Add rice to saucepan and season. Cover, reduce heat, and simmer for approximately 50 minutes.
3. About halfway through cooking the rice, add the tomatoes and garlic. Mix well and continue cooking the rice until just done. Serve immediately.

Really wonderful! This combines three of my favorite ingredients (wild rice, sudried tomatoes and garlic) without adding too much of any others, so it is easy, flavorful and I can almost smell the delicious flavours:) I am cooking this tomorrow!
