I made a few adjustments – I used half raw sugar and half honey, I love its deeper, caramel taste with fruit, or vegetables, in this case. Then, I sprinkled the top with whole oats and dotted it with butter.
The zucchini texture was indescribably good – soft, smooth but with a bit of a bite. The crust was just the right amount of crusty. And this cobbler is great hot or cold.
I had it with some greek yogurt instead of ice cream so a la mode, of sorts. Perfect for today’s rainy day.
I’m loving the sound of this cobbler! Zucchini wouldn’t be my first thought but it just looks so tasty!
It really surprised me! The taste & texture are both stellar and it’s just such a satisfying combination.
gosh, that really is a different one, I’ll take your word on it being tasty. Might be a good way of getting my children to taste what they call…’yuck, courgettes’ !!
