A winter warmer and the ultimate comfort food, but also perfect on cool fall evenings, with a cup of tea while indulging a craving for Downton Abbey.
We went apple-picking over the weekend so there will be many more apple utilizing recipes to come. Most of them of the baked goods variety.
You’ll need:
- 1 sheet fresh puff pastry
- 3 macintosh (crispins are good too) apples, peeled, cored, and cut into a small dice.
- 1/3 cup mixed dried fruit (apricots, plums, golden raisins)
- 1/4 cup walnuts + a handful more for the top of the strudel
- 1 tsp cinnamon
- 1 packet vanilla sugar
- 2 T sugar
- 1 tsp cornstarch
- 1 T butter, diced
1. Prepare the apples first, then dice the dried fruit and the 1/4 cup walnuts. Mix everything together in a mixing bowl, then add the sugars, cinnamon, and cornstarch.
2. Preheat oven to 375F and prepare a parchment-lined baking sheet. Stretch out the pastry with your hands, approximately to the size of the baking sheet.
3. Layer the filling in the middle of the pastry and roll carefully. Dot the pastry with the diced butter and stick the remaining walnuts on top.
4. Bake until puffy and golden, approximately 30-35 minutes. Use a pastry brush to baste with the melted apple-y butter.
