Another unexpected piece of advice from Еric Ripert (or rather his twitter) that came in extra useful yesterday. I came home after a weekend away to find that I had two avocadoes that were about to quickly go from perfectly ripe to the other side of ripe. What to do?
Baked avocado?yes! it s delicious and very unusual;filled with crab+mayo+mustard+bread crumb+ old bay+lemon/10 min at450 or broil is fine too [sic]
I had all of the other ingredients in the pantry (love a well-stocked pantry!). I substituted shrimp for crab, though I think crab would be even tastier, added some paprika and cheese, then baked at 10 minutes at high broil 230C (450F).

Of course Eric Ripert has these ingredients just lying around. And can do wonders with a toaster oven.

So since I also had (most of) these lying around and he’s from Antibes, as it turns out, this is clearly an omen.
