One of the simplest and most beautiful ways to use peaches this time of year is to puree them with a splash of rose syrup, for sweetness and an even more lovely shade of soft pink.
Making your own bellinis – a drink first introduced at the legendary Harry’s Bar in Venice, Italy – is a fast way to make new friends at a dinner party!
Note: Depending on how many drinks you are mixing, adjust amount of peaches and syrup accordingly, while keeping the proportions at about 1 teaspoon of rose syrup per 1 cup of puree.
Peach-rose bellini
You’ll need:
- 6-8 ripe donut peaches
- 1 t rose syrup
- champagne or sparkling wine
1. Peel and pit the peaches – scald them in boiling water first, then ice and peel.
2. In a food processor, combine peaches and rose syrup. Puree until smooth.
3. Place half a teaspoon of peach puree in every coupe or glass, then top with sparkling wine.
