Christmas cookies galore! Happy holidays, everyone.
I love Christmas cookies, but I don’t love that guilty feeling you get after a whole day of reaching into a lovely box or at a lovely plate of fudge and sugary sweets.
So here is a lighter, crispy cookie recipe to mix into your ‘cookie box’ this year, I know you’ll love them!
Almond and oatmeal cookies
You’ll need:
- 1/2 cup slivered almonds
- 1 1/2 cup old fashioned rolled oats
- 4 T butter, melted
- 1 egg
- 1/3 cup dark brown sugar
- 1 t fresh lemon zest
- 3 T raisins
1. Preheat oven to 350F and prep two baking sheets lined with wax paper.
2. Whisk together sugar, butter, and egg in a medium bowl.
3. Fold in oats, almonds, lemon zest, and raisins.
4. Spoon cookies – about tablespoon-size of dough per cookie – onto the baking sheets. Flatten each lightly with the spoon.
5. Bake for about 15 minutes until crisp and golden. Let cool before scooping off of the baking sheets.
