… otherwise known as all good things to be used in the pumpkin bread or pumpkin muffins! Made a little more decadent with the addition of chocolate chips.
You’ll need:
- 1 1/2 eggs, lightly beaten
- 1 cup sugar
- 1/2 cup pumpkin puree
- 1/2 cup butter, melted and cooled
- 1/2 tablespoon vanilla
- 1 1/2 cups flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 teaspoon cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/33 cup chocolate chips
- 1/2 cup zucchini, shredded
- 1/2 cup walnuts, chopped
1. Preheat oven to 350 F (176C) and grease and a loaf pan or one muffin pan!
2. Mix eggs and sugar together, then stir in the pumpkin and butter.
3. Stir dry ingredients together and add to egg mixture, combining well.
4. Add in the zucchini and the nuts.
5. Divide into pans and/or muffins cups and bake 45-50 minutes (for the loafs) and approx 30 minutes (for the muffins) or until baked through in the center(s).
